Now there's two ways you can go about making these pancakes. You can either make your short stack from scratch or use a pre-made pancake mix. I prefer the second route if you're not a big cooker. Pancakes are super easy though! Now this was my first time making them and they came out delicious. There were about 4 chocolate chips to each pancake, so it was a balanced matcha chocolate taste. There was not one disappointed person at the table that morning, ha.
Option #1: From Scratch
- 1½ cups all-purpose flour
- 3 ½ teaspoons baking powder
- 1 teaspoon salt
- 1 ¼ cups milk
- 1 egg
- 3 tablespoons butter, melted
- ¼ cup of chocolate chips
- ½ cup of organic Matcha powder
In your large bowl, mix together the flour, baking powder, salt and sugar. Next pour in the milk, egg and melted butter; mix until smooth.
Option #2: Pre-made Pancake Mix
- 1 cup of pancake mix
- ½ cup of water (add more as you see fit)
- ½ cup of organic Matcha
- ½ cup of chocolate chips (add more if you love chocolate!)
In your large bowl, mix pancake mix, Matcha powder and water; mix until smooth.
Heat a lightly oiled griddle or frying pan over medium low heat (depends on your stove). Pour or scoop the batter onto the griddle/pan, using approximately ¼ cup for each pancake. Brown on both sides and serve hot.
Enjoy with melted butter, powder sugar and syrup! That cavity is just begging for it.
